Natural, unrefined sea salt with a delicate saltiness and a distinctive scent of the sea, hand-harvested from the Atanasovsko Lake Managed Nature Reserve.

Young salt crystals that form on the surface of the water during July and August. Because they are exceptionally light and do not sink, the sea breeze carries them towards the shore, where they naturally settle.

They are hand-harvested and undergo no refining, enrichment, or processing.
Thanks to the careful formation, harvesting, and packaging process, the salt retains a large proportion of its naturally occurring elements, including iodine, calcium, magnesium, potassium, zinc, manganese, iron, beta-carotene, and others.

The crystals — beautifully formed, unusually large, and irregular in shape — play a crucial role in how the salt interacts with both food and the palate. They dissolve easily, creating an intense burst of saltiness that fades almost as quickly as it appears.

As the larger crystals break down and dissolve, they release another wave of saltiness. This interplay between the acceleration and gradual fading of the salty sensation allows the sea salt, the food, and the palate to come together in something refined yet natural, flavourful, and beautifully balanced.

The crystals of Fleur de Sel naturally absorb up to 10% moisture, which helps stabilize them. They release excess moisture and, as a result, do not dissolve as quickly as dry table salt.
